Place the tomatoes in a colander placed over a bowl and press with a spoon to remove the excess liquid. Let sit until ready to use.
To prepare the sauce. Melt the butter in the skillet over medium-high heat. Add the onion and cook for 3 minutes.
Add the tomatoes and cook for 7 minutes.
Transfer the mixture to the blender and process into a smooth sauce. Alternatively, you could run it through a sieve. Pour this mixture back into the pan.
Add the vodka, cream, salt and pepper. Cook, while stirring, for an additional 5 minutes.
Spoon this over chicken, turkey breasts or pork chops and sprinkle with grated cheese. Serve at once.
